Amontillado Wine

This a elegant wine which ranges from dark yellow to old gold in colour. Its aromas are similar to hazelnut aromas on the palate; more poignant than the Fino wine. This is a dry wine while light and smooth in the mouth with well-balanced acidity. Its flavor combines harmoniously finesse and old age.

Production
It is the outcome of exposing a Fino wine to an oxidative aging for many years. The fine remains its distinctive "velo de flor" (veil of flor yeast) as long as it is replenished with wine from recenter vintage wine (criaderas y soleras system). If it is stopped with the "spray" of new way, the veil of flor begins to fade and it will be culminated in the birth of the Amontillado wine.

Gastronomy
It is an excellent companion for any salty snack such as cheese, olives or almonds. Also it can be paired with any type of beef, chicken or rabbit. Classically it was served with soups and consommé.

Pedro Ximénez Wine

This wine is a naturally sweet wine, with dark ruby color, a real honey of grapes. This wine is dense, full of pleasant varietal aromas, with nuances reminiscent of coffee, raisined fig, chocolate, cocoa, dates and of course, the characteristic smell of raisined grapes which gives its name. It is a real feast for the senses, fragrant and fruity, soft in the mouth and not cloying.

Production
Pedro Ximénez wine is obtained putting the grapes in the sun until the grapes are become almost raisins. Usually it is subjected to aging, process which increase slowly its colour in the casks. The colour goes from amber to shades jet. In its first phase, the aging is done under oxidative aging and later on its maturation as a wine will be completed in the American oak casks for its exclusive soleras and criaderas system for a minimum period of two years.

Minimum content of grape sugar is approximately 272 grams per liter.

Gastronomy
The Pedro Ximenez is itself a dessert. But it can also be used for culinary and pastry making. Would you like to give a touch of originality to your dishes? Fino Wine

It is a dry wine with pale colour and very fragrant aroma. Its taste is slightly bitter, slightly fragrant to the palate. This wine has a straw-coloured tonality with greenish topaz reminiscent in those which come from Moriles and Sierra de Montilla, denominated as the Superior quality within the Designation of Origin Montilla – Moriles.

Alcohol

The alcohol contained in this wine is completely natural due to the high temperatures reached during the ripening of the grapes.

Production

Fino wines are grown under veil of flor and require a minimum of three years aging before they can be deposited in the American oak barrels where is completed its aging under the criaderas and soleras system.

Montilla are aged using the criaderas y soleras system, a method of ageing where older wines are carefully mingled at various stages with newer wines, and one that is unique to southern Spain. This task that the winemaker carries out each new season is called “ correr a escala” (run a level).
The fusion of different seasons wines, as a result of the criaderas and soleras system, makes Fino wines as an non-cataloged one within any particular vintage.

 

Gastronomy
It is the ideal aperitif and marries well with any kind of tapas. Typical regional cuisine such as aubergine with honey; artichokes with ham or the famous salmorejo are dishes which fit perfectly with the Fino wine. Additional companion of the Fino wine are the famous rabo de toro and all types of red meat

Tinaja Wine

This wine retains the characteristics of newly fermented wines. Bright straw color, aromas of fruit, freshness on the palate, varietal fragrance and a slight persistence of carbon makes the wine jar attractive, elegant, genuine and gentle.

Alcohol
The variety of grapes Pedro Ximénez is extremely rich in natural sugars, which means that this wines naturally reach strength of up to 14 degrees, without needing any alcohol to be added to increase the strength.

Production
The making of this wine begins with a careful breeding of white grapes Pedro Ximénez, predominant in the property, and interspersed with a smaller amount of Montepila dominant in the area too.

Ripened grapes are delicately transported from the vineyards of the property to the winery. Therefore the high temperatures of the countryside can be avoided and the quality of the grapes is not deteriorated. Once there is ground for modern clusters procedures obtained the must is transferred to fermentation deposit at controlled temperatures.

After that, the wine will stand in the vasts where the fermentation takes place. This way of fermentation is called veil of flor and it is a sole and exclusive property of the wines from this area.
