Amber colored wine, between dark yellow and old gold. Its hazelnut aroma is more pungent on the palate than in the case of fine wine. It is a dry wine while smooth. Its flavor harmoniously combines finesse and old age. Very aged amontillados are usually used as handkerchief wines, ideal for perfuming.

crafting system
It is the result of subjecting fine wine to oxidative aging for many years. The fino maintains its peculiar “veil of flower” while it is replaced with wine from other younger criaderas, which contain wines from more recent harvests. If it stops "sprinkling", the flower gradually disappears and a slow transformation begins that will culminate in the birth of the king of generous wines: amontillado.
Gastronomy
It is an excellent accompaniment to any salty appetizer, such as cured cheese, olives or almonds. It can also be paired with any type of beef, chicken or rabbit. Classically it has also been used as an accompaniment to soups and consommés.
